Drink of the Week: the Chip-Chip

[It’s a little blurry but so will you be after you have a couple]

Two years ago I made a New Year’s resolution to Start Drinking. So many studies tell us that a glass of wine or a cocktail a day have huge benefits, and I have a tendency to believe that. Plus, anything that relieves stress and quiets the voices in my head – well you get the idea.

So for the past couple of years I’ve been attemtping to up my alcohol intake. But I don’t like really strong cocktails and the super-sugary ones just make me sleepy.

Here’s my new fave, introduced in Key West by my dear friend Paul Athanas but made with limes from my own tree!

I give you, The Chip-Chip:

1 shot Fonseca White Port (good luck finding a bottle – I had to special order mine from Silver Lake Wine)
1 squeeze of fresh lime juice
Tonic water

Serve in a highball glass with some ice.

First the ice, then the white port, then the lime squeeze, then the tonic.

Garnish with a slice of lime and give a little stir.

Easy, yet so delicious!
